Cheesy Barbeque Quesadillas

I must admit, I’ve never tried an authentic quesadilla (only from Mexican restaurants) but until I travel to South America, this version will do! If you want a quick and easy recipe to make for dinner after work, give this one a try!

P.S. One day I will buy a tortilla press and will make my own tortillas at home. When that happens, I’ll share the recipe with you.

Cheesy Barbeque Quesadillas

Ingredients
  

  • 3 Tbsp Olive oil
  • 1 small Brown onion finely diced
  • 1 cup Green bell pepper finely diced
  • 1 cup Frozen corn kernels thawed
  • 1 can Black beans rinsed and drained
  • 1 cup Barbeque sauce
  • 3 Tbsp Mexican seasoning
  • 1 tsp Salt
  • 1 tsp Fresh coriander
  • 8 Flour tortilla
  • 2 cups Cheese

Instructions
 

  • Head a non-stick frying pan on high heat. After 2 minutes add the olive and chopped onions. Cook for 4-5 minutes then add the bell pepper and cook for 2 minutes. Add the corn kernels, black beans, mexican seasoning, salt and corriander (this is optional). Cook for 2 minutes then set the aside.
  • Heat a clean non-stick frying pan and add a torilla. Heat both sides of the tortilla for 1-2 minutes until it becomes lighly toasted.
  • Add the grated cheese to cover the entire tortilla and let it melt for 1-2 minutes. Once the cheese has melted, add 2 tablespoons of the filling to one half of the tortilla. Fold half of the tortilla over the filling and gently press it down with a spatula and cook for about 30 seconds.
  • Seve the quesedillas guacamole and sour cream and enjoy.
