Easy Lentil Soup With Coconut

Looking for a quick dinner or lunch recipe? Try this easy lentil soup with coconut. It’s simple, delicious and ready in 20 minutes.

Start with onions and garlic

The base of this soup (and many traditional Hungarian soups) are onions and garlic. I always recommend to cook the onion and garlic for at least 5 minutes.

Add the spices

This soup has a number of delicious spices including ground cumin, coriander, mild curry powder and paprika powder. I like to add the spices at the beginning and lightly toast it until the spices become fragrant.

Lentils

I used red lentils for this soup because it doesn’t take long to cook. It also compliments the flavours of the soup really well but if you don’t have red lentils you could substitute it for a different type of lentil.

Coconut cream

The coconut cream gives this soup a nice creamy consistency and adds a very subtle sweetness. Highly recommend using the Kara brand if you have access to it but any brand will be great.

Ingredients
  

  • 3 tablespoons olive oil
  • 3 medium brown onions finely diced
  • 3 cloves garlic minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground corriander
  • 2 teaspoons mild curry powder
  • 1 teaspoon paprika powder
  • 1 can (400g) chopped tomatoes
  • 2 cups dry red lentils
  • 3 teaspoons salt
  • 1 bouillon cube
  • 750 ml boiling water
  • 1 cup coconut cream

Instructions
 

  • Add the oil, onion and garlic to a large pot. Cook for 5-6 minutes until the onion becomes translucent and light brown in colour.
  • Next add the ground cumin, gorund coriander, curry powder, paprika powder and stir for 1-2 minutes until the spices become fragrant. 
  • 1.Add the chopped tomatoes and stir for 2 minutes. In the meantime, rinse the red lentils.
  • After 2 minutes, add the red lentils, salt, boullion cube and water. Cover the pot and bring to a boil. Once boiling, turn the heat down and allow the soup to simmer for at least 15-20 minutes (stirring every 5 minutes).
  • Once the lentils are soft add the coconut milk, stir and you're done!
