Add the oil, onion and garlic to a large pot. Cook for 5-6 minutes until the onion becomes translucent and light brown in colour.
Next add the ground cumin, gorund coriander, curry powder, paprika powder and stir for 1-2 minutes until the spices become fragrant.
1.Add the chopped tomatoes and stir for 2 minutes. In the meantime, rinse the red lentils.
After 2 minutes, add the red lentils, salt, boullion cube and water. Cover the pot and bring to a boil. Once boiling, turn the heat down and allow the soup to simmer for at least 15-20 minutes (stirring every 5 minutes).
Once the lentils are soft add the coconut milk, stir and you're done!
