Chickpea ‘Tuna’ Sandwich

Looking for a quick and easy breakfast, lunch or snack recipe? Look no further. This chickpea ‘tuna’ sandwich takes only 10 minutes to prepare and it is a delicious alternative to a classic tuna sandwich!

As you might have guessed it already, this sandwich was inspired by a classic tuna sandwich. Whether you’re vegan, vegetarian or a meat eater, it is nice to have a bit variation every now and then.

Chickpeas

The star in this sandwich are chickpeas! I absolutely love using chickpeas in cooking. You can used canned or dry chickpeas for this sandwich. Dry chickpeas do take a bit more time and I understand that sometimes there just isn’t enough time to do this. How to construct the sandwich

Add your leafy greens at the bottom followed by the chickpea ‘tuna’.

Next, add red onions and cherry tomatoes.

Lastly, add the sprout and another slice of bread.

Chickpea ‘Tuna’ Sandwich

Looking for a quick and easy breakfast, lunch or snack recipe? Look no further. This chickpea 'tuna' sandwich takes only 10 minutes to prepare. It is a delicious alternative to a classic tuna sandwich and makes the perfect breakfast or lunch to takeaway.

Servings 4 people

Ingredients
  

  • 1 can Chickpeas
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 3 Tbsp Veganase
  • 2 cloves Garlic (minced)
  • 1/2 tsp Smoked paprika powder
  • 8 slices Your favourite bread
  • 1 handful Salad greens
  • 1/2 small Red onion (finely cut)
  • 8 ripe Cherry tomatoes (cut in half)
  • 4 Tbsp Chia sprouts (optional)

Instructions
 

  • Add the chickpeas, salt, pepper, veganase, garlic and smoked paprika powder to a food processor. Pulse until the chickpea is ground but be careful not to overmix otherwise you'll get hummus (which wouldn't be bad either).
  • On a slice of toast, add the salad greens. Next add 2 spoonfulls of chickpeas. Then add the red onions followed by the sprouts (this is optional) then top off with another slice of bread.

Notes

This recipe makes 3-4 sandwiches depending on how much of the chickpea mix you put on each sandwich. If you want to make more then I would highly recommend doubling this recipe.
