Garlic Mushroom and Avocado on Toast
If you enjoy having savoury breakfasts, then this mushroom and avocado on toast will hit the spot!
Ingredients
- 3 Tbsp Olive oil
- 3 cloves Garlic (minced)
- 250 g White button mushroom (sliced)
- Salt (to taste)
- Pepper (to taste)
- 4 slices Bread (I used dad's homemade bread)
- few leaves Fresh basil (*optional)
Instructions
- Pre-heat a large frying pan on medium to high heat. After a minute add the olive oil and garlic. Stir the garlic for 1-2 minutes until it becomes fragrant and slightly brown in colour. Be careful not to burn it.
- Add the mushrooms, salt and pepper and stir well. Put a lid on top of the frying pan and allow the mushroom to release some of it's water content and reduce in size. The mushroom should be ready in 5-6 minutes.
- Toast four slices of bread and divide the avocado into two. Spread the avocado onto the four slices of toast evenly. Divide the garlic mushroom evenly on the toast and top with fresh basil (this is optional but adds a great flavour).
