Ginger Christmas Cookies
Ingredients
- 1 Tbsp Gound flaxseed
- 1 ½ cup Gluten free flour mix
- 2 tsp Cinnamon
- ¼ tsp Baking soda
- ¼ tsp Salt
- 2 Tbsp Molasses
- 3 Tbsp Maple syrup
- 1 Tbsp Olive oil
- 1 Tbsp Fresh ginger (minced)
- ¼-½ cup Rice milk
Instructions
- Pre-heat the oven to 180 C (357 F) and line a baking tray with baking paper.
- In a small bowl make a flax 'egg' by mixing the ground flaxseed with 3 tablespoons of water and set aside.
- In a large mixing bowl add the dry ingredients and mix well. Add the wet ingredients including the molasses, maple syrup, olive oil, rice milk, flax egg and minced ginger. Mix well using your hands and knead gently for a few minutes until a dough forms.
- Flour a clean surface and using a rolling pin, roll the dough out until it's about 1/2 cm thick.
- Use your favourite cookie cutters to cut shapes out of the dough. If you are left with some dough, repeat this process until the dough has been used up. Put the cookies on the baking sheet and bake in the oven for 10 minutes.
- If you have the patience and willpower, let the cookies cool for 10 minutes before trying them. Enjoy!
