Mexican Bean Nachos

Is there anything better than coming home after a long day to Mexican bean Is there anything better than coming home after a long day to the smell of Mexican bean nachos? It’s definitely one of my favourite way to end the day!

What makes this recipe great?

1. Corn chips

I had to start with this one. Corn chips have the perfect amount of crunch, saltiness that will keep you coming back for more. Better yet, it goes with mixed beans really well. My favourite is the Garden of Eatin’ Yellow Corn Chips but you can buy any brand you like.

2. Mexican bean mix

Nothing is more fulfilling than a large serving a mixed beans. Especially when they are beautifully seasoned! Whether you are vegetarian or eat meat, you’ll find that mixed beans complement corns chips really well. In this recipe I use the Ceres black beans and mixed beans. They have a variety of different beans including black beans, pinto beans and red kidney beans. This is not sponsored, just sharing my favourite brands. As for the seasoning, it is really simple; cajun seasoning and salt.

3. Guacamole

I couldn’t write a blog post about Mexican bean nachos without mentioning guacamole! I have to admit, I don’t think I could ever get sick of guacamole, or avocados for that matter. If you want to make some to go along with these nachos, I have a really simple recipe here. It’ll only take a few minutes but trust me, it’s definitely worth the time.

Easy Mexican Nachos with Guacamole

Ingredients
  

  • 3 Tbsp Olive oil
  • 2 medium Yellow onion (finely diced)
  • 1 can Black beans (rinsed and drained)
  • 1 can Mixed beans (rinsed and drained)
  • 2 tsp Cajun seasoning
  • 1 tsp Salt
  • 1 Tbsp Tomato puree
  • 450 grams Corn chips
  • 250 grams Dairy free cheese (grated)
  • 2 Tbsp Hemp seeds (optional)

Instructions
 

  • Preheat the oven to 180 degrees Celsius (356 degrees Fahrenheit).
  • In a large non-stick frying pan, add the olive oil and the yellow onions. Cook for about 5 minutes until the onion becomes translucent.
  • Add the beans, cajun seasoning, salt and tomato puree and mix well. Add a bit of water (about 1/2 – 1 cup), simmer for about 5 minutes then turn off the heat.
  • To a large baking tray add the corn chips, top with the bean mix and sprinkle on the grated cheese. Bake the nachos in the oven for about 10 minutes until the cheese has melted.
