- Add the arrowroot biscuits to a food processor (see notes if you don't have a food processor). Pulse until the biscuits become crumbly then add to a large mixing bowl and set aside. Repeat this process with the walnuts then add them to the same mixing bowl.
- Stir the biscuits and walnuts then add the apricot jam. The mixture should be crumbly but stick together. If it’s to dry, add another tablespoon of apricot jam.
- Roll the mixture into small bite size balls. I made 24 balls but you might make more or less depending on the size of your bites. I also left a bit of the mixture for the topping but this is optional.
- Melt the dark chocolate in a double boiler. Once the chocolate has melted, dip the bites into it and add a bit of the leftover mixture on the top.
- Put the bites into the fridge to set for at least 2 hours and enjoy!
Notes
If you don't have a food processor, place the biscuits in a plastic bag and gently crush them using a rolling pin on your kitchen bench. Repeat this process with the walnuts.
