Apricot Biscuit Bites

Ingredients
  

  • 250 grams Arrowroot biscuits
  • 250 grams Walnuts
  • 5 Tbsp Apricot jam
  • 150 grams Dark chocolate

Equipment

  • Food Processor (not essential but useful)

Method
 

  1. Add the arrowroot biscuits to a food processor (see notes if you don't have a food processor). Pulse until the biscuits become crumbly then add to a large mixing bowl and set aside. Repeat this process with the walnuts then add them to the same mixing bowl.
  2. Stir the biscuits and walnuts then add the apricot jam. The mixture should be crumbly but stick together. If it’s to dry, add another tablespoon of apricot jam.
  3. Roll the mixture into small bite size balls. I made 24 balls but you might make more or less depending on the size of your bites. I also left a bit of the mixture for the topping but this is optional.
  4. Melt the dark chocolate in a double boiler. Once the chocolate has melted, dip the bites into it and add a bit of the leftover mixture on the top.
  5. Put the bites into the fridge to set for at least 2 hours and enjoy!

Notes

If you don't have a food processor, place the biscuits in a plastic bag and gently crush them using a rolling pin on your kitchen bench. Repeat this process with the walnuts.
