Pre-heat the oven to 190°C (374°F) and grease a mini donut tray with coconut oil.
If you are making the apple sauce at home, place the chopped apple, water and cinnamon into a small pot. Bring to a boil then allow it to simmer for 15-20 minutes. Allow it to cool for 5 minutes then mash it either with a fork or use a Nutribullet and pulse for 2 seconds.
Next add the dry ingredients into a mixing bowl. Add the wet ingredients including the apple sauce, rice milk and oil into a separate bowl and mix well.
Add the wet ingredients to the flour mix and stir well (but don't over-stir).
Divide the batter eveny into the donut tray. Bake the donuts for 12 minutes then place them on a cooling rack for 5 minutes.
This is an optional step but you can brush the donuts with melted coconut oil and roll it in white sugarto give it extra crunch and sweetness.
