Apricot Biscuit Bites

You can make these apricot biscuit bites with only four ingredients. They are a delicious snack to share with your kids, friends and your family.

What you’ll need:

Arrowroot biscuits – The base of these bites are arrowroot biscuits. Hopefully they are easily accessible where you are!

Apricot jam – We make our own jam each year but you could definitely use store-brought jam. It will be just as delicious!

Walnuts – Adding walnuts to the apricot biscuit bites not only complements the flavours but also adds some crunch to them! If you’re not a fan of walnuts, you can swap them with any nuts of your choice (e.g. almonds).

Dark chocolate – We always have a block of dark chocolate at home. I really enjoy it and it’s a bonus that it is also great for baking! My favourite is the Whittakers 72% cocoa Dark Ghana chocolate but you could use any chocolate you like.

  • Food Processor (not essential but useful)

Ingredients
  

  • 250 grams Arrowroot biscuits
  • 250 grams Walnuts
  • 5 Tbsp Apricot jam
  • 150 grams Dark chocolate

Instructions
 

  • Add the arrowroot biscuits to a food processor (see notes if you don't have a food processor). Pulse until the biscuits become crumbly then add to a large mixing bowl and set aside. Repeat this process with the walnuts then add them to the same mixing bowl.
  • Stir the biscuits and walnuts then add the apricot jam. The mixture should be crumbly but stick together. If it’s to dry, add another tablespoon of apricot jam.
  • Roll the mixture into small bite size balls. I made 24 balls but you might make more or less depending on the size of your bites. I also left a bit of the mixture for the topping but this is optional.
  • Melt the dark chocolate in a double boiler. Once the chocolate has melted, dip the bites into it and add a bit of the leftover mixture on the top.
  • Put the bites into the fridge to set for at least 2 hours and enjoy!

Notes

If you don’t have a food processor, place the biscuits in a plastic bag and gently crush them using a rolling pin on your kitchen bench. Repeat this process with the walnuts.
