Mini cinnamon donuts

Who doesn’t like a good doughnut?! I must admit, I’ve never had much of a sweet tooth. This was true even before I started my plant based journey. That’s not to say I don’t chocolate or any sweet things, because I do. I just don’t have the urge to have sweets every day.

Because of this I have never really been a big baker, and since I’ve started my plant based journey I have been even more reluctant to experiment with baking because how can you bake with no eggs, butter or milk??? Recently, I have made an effort to incorporate more baking into my life and I’m so happy that it’s been paying off. I made these doughnuts a few weeks ago and they turned out great. And to make it even better they are dairy free, egg free and gluten free! I hope you like this recipe as much as I do and let me know in the comments below what you think of it if you’ve made it.

Mini Cinnamon Donuts

Servings 8 donuts

Ingredients
  

  • 1 ¼ cup Gluten-free flour mix
  • ½ cup Sugar
  • 2 tsp Baking powder
  • ¼ tsp Salt
  • 2 tsp Cinnamon
  • cup Apple sauce
  • cup Rice milk (or milk of your choice)
  • 1/3 cup Oil (I used rice bran as it has a neutral flavour)

Apple sauce

  • 2 medium Apples (cut into small cubes)
  • 1 cup Water
  • ½ tsp Cinnamon

Instructions
 

  • Pre-heat the oven to 190°C (374°F) and grease a mini donut tray with coconut oil. 
  • If you are making the apple sauce at home, place the chopped apple, water and cinnamon into a small pot. Bring to a boil then allow it to simmer for 15-20 minutes. Allow it to cool for 5 minutes then mash it either with a fork or use a Nutribullet and pulse for 2 seconds.
  • Next add the dry ingredients into a mixing bowl. Add the wet ingredients including the apple sauce, rice milk and oil into a separate bowl and mix well.
  • Add the wet ingredients to the flour mix and stir well (but don't over-stir).
  • Divide the batter eveny into the donut tray. Bake the donuts for 12 minutes then place them on a cooling rack for 5 minutes.
  • This is an optional step but you can brush the donuts with melted coconut oil and roll it in white sugarto give it extra crunch and sweetness.
