Pulled Jackfruit Kumara Boats

Ingredients
  

  • 4 medium Kumaras washed and dries
  • 4 Tbsp Olive oil
  • 1 large Brown onion finely diced
  • 2 cloves Garlic
  • 1 can Jackfruit rinsed and pulled into small pieces
  • ¼ cup Soy sauce
  • 1 tsp Salt to taste
  • 2 Tbsp Sweet chilli
  • 1 Tbsp Peri-Peri seasoning
  • 1 cup Mayonnaise
  • 1 handful Coriander

Instructions
 

  • Preheat the oven to 180 degrees C (356 F) and line a baking tray with baking paper.
  • Place the kumara on the tray and and prick each one with a fork multiple times. Drizzle with a bit of olive oil and bake in the oven for 45-50 min until the kumara is well cooked inside
  • While the kumara is baking, prepare the pulled jackfruit. Heat a large frying pan with olive oil and add the onion.
  • Cook the onion for a few minutes until translucent. Add the garlic and jackfruit and cook for 5 minutes.
  • Next add the soy sauce, sweet chilli sauce, peri-peri seasoning and salt.
  • Cut the kumara open to make create 'boats' and fill them with the jackfruit mixture.
  • Top with a dollop of mayonnaise and add fresh chopped coriander (this is optional).
