Pulled Jackfruit Kumara Boats
Ingredients
- 4 medium Kumaras washed and dries
- 4 Tbsp Olive oil
- 1 large Brown onion finely diced
- 2 cloves Garlic
- 1 can Jackfruit rinsed and pulled into small pieces
- ¼ cup Soy sauce
- 1 tsp Salt to taste
- 2 Tbsp Sweet chilli
- 1 Tbsp Peri-Peri seasoning
- 1 cup Mayonnaise
- 1 handful Coriander
Instructions
- Preheat the oven to 180 degrees C (356 F) and line a baking tray with baking paper.
- Place the kumara on the tray and and prick each one with a fork multiple times. Drizzle with a bit of olive oil and bake in the oven for 45-50 min until the kumara is well cooked inside
- While the kumara is baking, prepare the pulled jackfruit. Heat a large frying pan with olive oil and add the onion.
- Cook the onion for a few minutes until translucent. Add the garlic and jackfruit and cook for 5 minutes.
- Next add the soy sauce, sweet chilli sauce, peri-peri seasoning and salt.
- Cut the kumara open to make create 'boats' and fill them with the jackfruit mixture.
- Top with a dollop of mayonnaise and add fresh chopped coriander (this is optional).
