Peanut Satay Noodles

Who doesn’t like a good stir fried noodle? It’s often my go to meal when I have lots of veggies left over or if I want to make quick meal. This recipe is not only delicious but also colourful and very easy to make. All you have to do is cook the noodles, make the satay sauce and stir fry the vegetables on high heat. The rest is a matter of combining everything and plating up a beautiful meal. Hope you enjoy it as much as I do!

Peanut Satay Noodles

Ingredients
  

  • 250 grams Rice noodles
  • 2 Tbsp Sesame oil
  • 1 medium Red onion finely diced
  • 1 large Red bell pepper roughly chopped
  • 1 large Carrot cut into strips
  • 1 cup Broccoli cut into florets
  • 1 Spring onion finely chopped

Peanut sauce

  • 6 Tbsp Chucky peanut butter
  • 3 cup Soy sauce
  • 2 Tbsp Sweet chilli sauce
  • 2 cloves Garlic

Instructions
 

  • Cook the rice noodles according to the packet instructions. Strain and put aside into a large bowl once finished cooking.
  • To a large frying pan or wok add some oil. Add the red onion and cook for 5 minutes. Add the red and yellow pepper, carrot and broccoli florets and cook for 4-5 minutes on high heat.
  • When the vegetables are done, add the pasta and the peanut sauce to the wok. Stir everything until well combined and do a final taste test.
  • Serve hot and top with spring onions and sesame seeds.
