Cook the rice noodles according to the packet instructions. Strain and put aside into a large bowl once finished cooking.
To a large frying pan or wok add some oil. Add the red onion and cook for 5 minutes. Add the red and yellow pepper, carrot and broccoli florets and cook for 4-5 minutes on high heat.
When the vegetables are done, add the pasta and the peanut sauce to the wok. Stir everything until well combined and do a final taste test.
Serve hot and top with spring onions and sesame seeds.
