Method
- Pre-heat the oven to 175 C degrees. Line a loaf tin with baking paper.
- Add the lentils to a pan with 3 cups of water. Bring to a boil and simmer for 15-20 minutes until the lentils are well cooked.
- While the lentils are cooking, sauté the onion and garlic for about 5 minutes in a non-stick frying pan. Add the Cajun seasoning, oregano, salt and tomato passata and stir well.
- In a food processor, add the oats and pulse until it becomes a fine crumb. Drain the lentils and add them to the food processor along with the onion mixture. Pulse until all the ingredients are combined.
- Add the loaf mixture to the tin and flatten with a spatula. Bake it in the oven for about 50 minutes (or until the top becomes a nice brown colour).
Glaze
- Mix the ketchup and soy sauce together in a small bowl and using a brush or the back of a tablespoon spread the glaze over the loaf after it has finished baking.
