Easy Meatless Meatloaf

This meatless meatloaf is the perfect dish for a meatless Monday night dinner. It goes really well with mashed potatoes.

Ingredients
  

  • 2 cups Dry brown lentils (rinsed and drained)
  • 2 large Brown onion (finely diced)
  • 4 cloves Garlic (minced)
  • 4 Tbsp Cajun seasoning
  • 2 Tbsp Oregano (dried or fresh)
  • 4 tsp Salt
  • 4 Tbsp Tomato Passata
  • 3 cups Rolles oats
Glaze
  • 2 Tbsp Ketchup 
  • 4 Tbsp Soy sauce

Method
 

  1. Pre-heat the oven to 175 C degrees. Line a loaf tin with baking paper.
  2. Add the lentils to a pan with 3 cups of water. Bring to a boil and simmer for 15-20 minutes until the lentils are well cooked.
  3. While the lentils are cooking, sauté the onion and garlic for about 5 minutes in a non-stick frying pan. Add the Cajun seasoning, oregano, salt and tomato passata and stir well.
  4. In a food processor, add the oats and pulse until it becomes a fine crumb. Drain the lentils and add them to the food processor along with the onion mixture. Pulse until all the ingredients are combined.
  5. Add the loaf mixture to the tin and flatten with a spatula. Bake it in the oven for about 50 minutes (or until the top becomes a nice brown colour).
Glaze
  1. Mix the ketchup and soy sauce together in a small bowl and using a brush or the back of a tablespoon spread the glaze over the loaf after it has finished baking.
