Why lentils?

Lentils are a great source of plant based protein and are reasonably accessible and affordable. The great thing about dried lentils is that unlike other legumes such as chickpeas, they don’t require soaking. In fact, they cook pretty quickly which makes them great when you are running short of time. Serve with anything

I usually like to serve this meatloaf with mashed potatoes and sautéed red cabbage. My mum makes the best sautéed red cabbage and I’d like to share her recipe here someday. However, you can serve it with a salad, rice or anything else you prefer.

The Glaze

The glaze for this easy meatless meatloaf only requires two ingredients; ketchup and soy sauce. It is both salty and sweet, and complements the ‘meatloaf’ really well.

Easy Meatless Meatloaf

This meatless meatloaf is the perfect dish for a meatless Monday night dinner. It goes really well with mashed potatoes.

Ingredients
  

  • 2 cups Dry brown lentils (rinsed and drained)
  • 2 large Brown onion (finely diced)
  • 4 cloves Garlic (minced)
  • 4 Tbsp Cajun seasoning
  • 2 Tbsp Oregano (dried or fresh)
  • 4 tsp Salt
  • 4 Tbsp Tomato Passata
  • 3 cups Rolles oats

Glaze

  • 2 Tbsp Ketchup 
  • 4 Tbsp Soy sauce

Instructions
 

  • Pre-heat the oven to 175 C degrees. Line a loaf tin with baking paper.
  • Add the lentils to a pan with 3 cups of water. Bring to a boil and simmer for 15-20 minutes until the lentils are well cooked.
  • While the lentils are cooking, sauté the onion and garlic for about 5 minutes in a non-stick frying pan. Add the Cajun seasoning, oregano, salt and tomato passata and stir well.
  • In a food processor, add the oats and pulse until it becomes a fine crumb. Drain the lentils and add them to the food processor along with the onion mixture. Pulse until all the ingredients are combined.
  • Add the loaf mixture to the tin and flatten with a spatula. Bake it in the oven for about 50 minutes (or until the top becomes a nice brown colour).

Glaze

  • Mix the ketchup and soy sauce together in a small bowl and using a brush or the back of a tablespoon spread the glaze over the loaf after it has finished baking.
